“I am Taiwanese. I’ve been in Hong Kong for 10 years, and I’ve been brewing coffee for 10 years,” says sensory ZERO’s coffee trainer Kris with a smile. Her charm far exceeds her sweet smile and exotic Taiwanese accent; her passion for coffee, too, is alluring.


 

Increased Food Variety to Complement Coffee Promotion 

“Coffee was a stranger to me prior to moving to Hong Kong, which has many cultural differences than my hometown. Everything is about speed here, even sipping on a cup of coffee,” she adds. As such, she’s noticed that coffee shops also offer food, whereas ones in Taiwan focuses only on the cuppa. This became the driver for sensory ZERO in crafting an extensive menu that not only complements, but also promotes its java.

“Aside from coffees, we also have coffee-inspired drinks for non-coffee drinkers,” says Kris while mixing an Espresso with homemade orange soda. “This is our signature Orange Sparkling Americano. Our House-Blend is composed of washed and dried Ethiopian beans mixed with small amounts of beans from Latin America, meaning it’s balanced and fruity. That’s why I want to complement it with orange juice to amplify its fruitiness for a more textured mouthfeel.” The fragrant coffee pairs perfectly with citrus, and the soda is just the right antidote for hot summer days. 

Other best-sellers like Crazy Chocolate and Crazy Mocha are also the brainchildren of Kris. French Valrhona chocolate is hand-crushed to maintain its freshness, and its exaggerated design and luscious flavours will surely impress.


 

Team of Q-Grader: Showing Off  with Making a Cup of Siphon

Albeit its diverse menu, sensory ZERO is devoted to coffee. Kris continues, “I am a Q-grader (a trained and Coffee Quality Institute (CQI) licensed coffee cupper) and our boss Dixon Ip is Hong Kong’s only recognized Q-instructor. Aside from teaching others, he leads internal training as well; so sensory ZERO probably has the most Q-graders.” 

Personally, Kris has received a number of accolades and is particularly skilled in siphoning. She still enjoys watching the water rise to the top chamber, pouring in the coffee powder, and observing it swirling and swelling. Kris lets out a smile, evidently still passionate about her craft even after 10 years.
