【No-fail Slow-roasted Turkey】(serves 6-8)

Ingredients:

  • 1    14 lb. turkey, defrosted
  • ½    cup butter
  • ¼    cup chopped thyme
  • ¼    cup chopped sage
  • 2    teaspoons sea salt
  • 2    yellow onions, quartered
  • 2    lemons, quartered
  • ½    cup white wine or water 

Preparation:

1.  Preheat the oven to 180°C or 350°F.

2. Beat the butter together with thyme, sage and sea salt until well-combined.

3.  Rinse the turkey and pat it dry.

4. Loosen the turkey skin from the breast using a butter knife (be careful not to pierce the skin).

5. Spread the herb butter in between the skin and the breast.

6. Place the turkey breast-side-up on a rack in a roasting tray.

7. Stuff the turkey’s cavity with onion and lemon pieces.

8.Pour the white wine or water into the tray.

9. Bake the turkey at 180°C or 350°F for an hour, then turn the oven down to 120°C or 250°F and continue roasting.

10. Baste the turkey with juices from the roasting tray every 2 to 3 hours.

11. Test the internal temperature at the thickest part of the turkey after 7 hours. If it reads 75°C or 165°F, the bird is ready to be carved and served.
