Roast 70kg of beans Every Day, Start Conversation with Aromas and Sound of Roasting

The aromas come from coffee shop NINETYs and its roaster Yanese. She says, “I roast around 70kg of beans every day. Measuring only 5kg per roast, I’d have to do it multiple times.” This explains the aromatic cloud always lingering outside the shop. Though with only three years of experience, she’s now a key member at NINETYs thanks to her undue hard work and passion for the trade. 

“The roaster here operates every day as we need to provide for all the NINETYs shops across the city,” she adds. 

As coffee gains popularity in Hong Kong, a number of coffee shops promote their own roasters, but many take place in industrial settings and few, like NINETYs, do it inside the shop itself. In fact, it’s a great conversation starter. “Customers can get up close and personal with our roaster here. Its aromas and sounds spark their interest: they’d come and ask us about it and share their comments as well,” she says.

Upon a bridge built from a symphony of coffee aromas and sounds, Yanese can better understand her customers’ thoughts and feelings for coffee. She relishes in this sense of accomplishment. “Baristas talk to customers about things like brewing and the beans themselves; but as a roaster, I can truly dig deep into the preferences of customers and even of our colleagues from other shops so I can adjust my blend to craft something that not only impresses them, but also myself.
